Lilah’s Post: Meet Lilah!

Hello! My name is Lilah Chase and I will be working with Seacoast Eat local this spring as an intern. I am a junior at the University of New Hampshire, studying dietetics in nutrition. I am from a small town outside of Albany, NY, but always knew I wanted to attend UNH.

I love eating healthy and creating healthy, balanced meals so you will definitely be seeing some recipe blog posts from me in the future! Some of my favorites include spiralized sweet potato egg nests and almond herb crusted chicken. I recently created an instagram @lilahandlemons where I post some of my creations, it is a fun way to show my meals and it helps me to eat better at the same time!

Current in season foods that I love include sweet potatoes and carrots. I am also very into cruciferous vegetables such as cauliflower, broccoli, brussels sprouts and various cabbages. I love my veggies!

When it comes to exercise spin, recumbent bike workouts and yoga classes are my go-to. To me spinning is so much fun and it never feels like I am being forced to go. I enjoy sweating and really getting my heart rate up when working out and spin does just that. If I’m feeling more mellow or want to relax a little I will opt for a yoga class, or I will just do it at home in my room!

I am really looking forward to working with Seacoast Eat Local and learning more about eating locally and ways to bring the community together by supporting local farms and vendors. Look for me at the upcoming Winter Farmers’ Markets either at the SNAP/EBT table or merchandise table!
